    About this recipe: The kids enjoy noodles more than they enjoy rice so this is something we cook for lunch very frequently.

    Ingredients

    • 4 bowls water
    • 1 rack chicken bones
    • 1 handful ikan bilis
    • 2 cloves garlic, smashed
    • Salt to taste
    • Light soy sauce to taste
    • Enough noodles for 3 people
    • 3 eggs
    • 3 sticks crabmeat, cut
    • 1 fishcake, sliced
    • 150g beansprouts, blanched
    • Spring onions as garnish
    • Fried ikan bilis as garnish
    • Fried shallots as garnish

    Directions

    1. Boil the water, chicken bones, ikan bilis and garlic for 30 minutes under medium heat. Add salt and light soy sauce to taste.
    2. In another pot of boiling water, blanch the noodles for about 5-7 minutes under medium heat. Rinse under cold water.
    3. Crack the eggs into the pot of boiling water and allow it to cook until it is set. Stir to prevent it from sticking to the bottom.
    4. Arrange the noodles in a bowl and stack the crabmeat, fishcake, beansprouts and egg. Pour the soup over the noodles. Serve with spring onions, fried ikan bilis and shallots as garnish.
