About this recipe: This is a very quick and effective entree or snack. You can make as many variations as your imagination allows. I use olive oil infused with cooked capsicums.


Serves: 6 

  • 6 slices of your favourite bread
  • 2 large tomatoes
  • 2 tablespoons olive oil, approx
  • 2 cloves of garlic
  • Olive oil
  • handful of basil or parsley, torn
  • salt & pepper to taste

Prep:6min  ›  Extra time:9min  ›  Ready in:15min 

  1. Finely chop tomatoes and place in a bowl, add enough olive oil to just cover tomatoes. Add the basil or parsley stir it all together then add salt & pepper to taste.
  2. Toast the bread then rub each slice with the garlic - on one side only.
  3. Add tomato mixture to each slice of toast - the side infused with garlic - and serve. Voila!
